Personal Lasagna Cupcakes With A Chili Kick

Are you looking for a fun, creative dinner or eve snack idea? This one will have you dusting the flour off your hands and hanging up that mom apron with pride. Who knew a dish that has been hard to accomplish at first, could be so easy? I am talking about Lasagna. boiling the nooodles and not breaking them, layering them. Exhausting! Well My kids also happen to love chili. What better to do then mix the two into one amazing little cupcake. Not the cupcakes you say no too seconds for but one that will keep you saying “yes, you can have thirds”

This is a simple spin on a Chili Mac Recipe by Ragu. YUM! It’s simple and requires minimum effort. You can even save left overs for lunch the next day or heat it up fr a quick snack to tide your kids over till the next meal.

You will need 

Ragú® Old World Style® Traditional Sauce

One package of Won-ton Wrappers( can be found near vegetables fridge sections)

1 lb of hamburger

1 container of ricotta cheese

1 packet of Chili Seasoning (original)

Set oven at 350 degrees. Bake time will be 10-15 minutes.  (Makes 24 cupcakes) 

First start by cooking and browning your hamburger. While that is browning, add in half packet of chili seasoning. Once that is cooked and done, set aside in a bowl. Now get out your cupcake pan and make sure it is spray a little with nonstick spray. Grab your Ragu sauce and add a table spoon to the bottom of each cupcake center.

Then you want to get your won-ton wrappers and cut them into a circle or using a cookie cutter. I used a biscuit cutter. It gets the job done! Then put one won-ton wrapper at the bottom of each cupcake hole. Now you want to layer some ricotta cheese on top, about a nice heaping spoonful.

Then after that you add another layer of won-ton wrappers. You can now layer a spoonful of Ragu sauce on top of the won-ton wrapper. Make sure you cover the top by spreading the sauce all over the wrapper.  Now add a spoonful of hamburger to each cupcake hole. Now you want to put a small spoonful of Ricotta cheese on top of the meat. Spread it out just a tad. Now add one more layer of won-ton wrappers to the tops and push the sides down if they over lap the holes. Then put one more spoonful of Ragu sauce on the top and spread it all over to leave no part sauce-less. If you do, when you bake it those parts will become hard and not to fun to eat.

Then you toss it in the oven and bake for about 10-15 minutes until they look done. You can leave them just as is or add a little bit of sprinkle cheese on top and toss back in for 3 minutes to melt. The trick to getting these out the pan once they cooled for a few minutes, is getting a rubber spatula and twisting it around the edge of the cupcake and then scoop out. I place them onto the plate.

These are so fun and taste so good. My kids are allowed to ask for one anytime of day. They love the fact of it being called a cupcake. For me as a mom. They are simple and easy to whip up. Feel like a rock star to your kids and give them a cupcake for dinner.
