Instant Pot Caramel Cheesecake

You will need an Instant Pot and a 7in Round Springform Pan

OK, so if you are looking for an instant pot recipe for something sweet. This is it. I can tell you I got an instant pot less then a month ago. I have since become head over heels in love with it. I want to use it everyday. I have made so many meals in it. Pulled pork in 90 minutes. Now I am whipping up cheesecakes. Sure you want to know how too.

It’s pretty easy and first time making one, it came out perfect. Rustic, homemade looking and everything. So enjoy the recipe and if you try it. Let me know how it turns out or if you have suggestions.

Ingredients 

Instant Pot 

7 inch round spring form pan

Crust

One packet of honey gram crackers or 1 1/4 cup

6 tablespoons of butter

Filling 

2 8oz of cream cheese

Sprinkle of salt

2 tablespoons of heavy cream Or sour cream

1/2 cup of white sugar

2 large eggs

1 egg yolk

1 teaspoon of vanilla

JM Smucker Caramel sauce

1/4 cup of walnuts

HELPFUL TIP– I uses the bottom of my spring pan to cut a piece of parchment paper to fit to the bottom. Then spray it with a little non-stick spray. Also spray the sides of the pan.

Now grab your gramcrackers. If they are not crushed. You can place them into a zip lock baggy and crush them. Roll them out with a glass or can of some sort too if needed. Put them into a bowl and add in your 6 tablespoons of butter-Melted. Stir around until combined well. Now get your mixture and press it into the bottom of the pan and also a little along the sides to create a lip. Then set aside and get working on the filling.

In your mixer add in your cream cheese and heavy cream. Mix until it’s creamier. Then add in your sugar and mix well. now start by having your mixer on low speed and add one egg. Then add your second egg. Add the vanilla to the egg yolk and stir up. Then add the yolk into the mixer too.

Now you want to pour your filling into the pan. Grab your instant pot and add two cups of water to the bottom and also have your trivet in place.

Found this helpful tip online. (create a holder for your cheesecake.) Grab a piece of foil and make it long enough to fit the pan and extra. Fold it long wise into a long strip. Then put a paper towel folded into a long strip as well into the inside of the foil. paper towel will be between the foil and pan. I like to crumble the sides up a little like a handle. Then place into your instant pot. Secure the lid and make sure the seal is closed. Press manuel on high pressure. Set it to 41 minutes. I felt one more minute would of been perfect. Then let it natural release when done for about 15-20 minutes.

Once it’s done. The cheese should jiggle like jello almost. I placed mine in the fridge covered and let cool completely. Once it is cool take out and set on your serving dish. Grab your caramel sauce and drizzle it ontop with a spoon. Place your walnuts in the middle and drizzle a little on top of those too. Then slice and enjoy.

    This looks wonderful and I’d like to make it, but can it be made in a pressure cooker or slow cooker?????? I do not need another appliance in my kitchen and I don’t have an instant cooker.

    • A pressure cooker is the same thing as an instant pot just depends on your pots settings. You can try to adjust things you see fit with your cooker settings.
