Easy Ice Cream Sandwich With Voortman

Are you not the perfect baker? Well I got an easy treat for you. Everyone will be asking for these at all the parties. My kids love ice cream, especially in the summer. Sometimes I get the feelings of wanting to make something creative without a ton of work. Well this Voortman Cookie  ice cream sandwich is a treat but so easy to make. You can make it in the morning and serve it for lunch. You can also put your own spin on it easily.

We made an Apple version of the ice cream sandwich.

Easy Ice Cream Sandwich With Voortman

You Need 

Voortman ShortBread Swirl Cookies 

1/2 Cup Heavy Whipping cream

2 Tablespoons of Sugar

1 teaspoon of cinnamon (Plus Extra to sprinkle on top)

Apple pie filling

Sprinkles (Optional)

First you want to get out your hand or stand mixer. Now add in your heavy whipping cream and sugar. Start the mixer on low and slowly get it up to high without splattering everywhere. If it is splashing, then it’s too high and turn it down a notch. Whip it on high until the cream turns into a whipped texture. Now add in you cinnamon and whip it a few more seconds.

Once it is down being whipped, add it to a freezer safe bowl. You can sprinkle extra cinnamon on top f you’d like. Let it freeze for about 2 hours or until hardened. Now get it out of freezer and get your short bread cookies out along with your apple filling.

Now give it a few seconds to thaw. Scoop a heaping amount onto on the cookies. Make it an even layer if possible. Now add two apple slices to the top of the filling. Then close it with another short bread cookie.

Repeat until all your cream is gone. If you want to add sprinkles. You just have to add some sprinkles to a bowl and slowly press the sides of the sandwich into the sprinkles.

You can eat it right now if you want. If you’d like it to be more frozen, you can add the sandwiches back in the freezer to harden and enjoy later. Make sure you place the sandwiches in the a freezer safe bag or container.

Voortman has a ton of cookies, so if shortbread isn’t your favorite you can check out all the other options they offer. Maybe use two different cookies. So many options. Not only are Voortman cookies just as they are but they make great additions to lots of desserts.
