Perfect Lemon Loaf – Includes RAW Sugar Glaze

Are you looking for that perfect spring/summer treat! A lemon loaf would be perfect. It is sweet with a tangy kick! It really makes your taste buds scream. This loaf has my family asking for thirds. The cake is sweet with a hint of lemon. While the outside is more tangy with a tiny crunch that really satisfies all your senses. Give it a go. It’s easier then you think! You don’t even “NEED” a mixer if you don’t have one.

You will need 

1 ¾ cup of flour

1 Tablespoon of Baking Powder

1 teaspoon of salt

1 ¼  cup of sour cream

1 ¼ cup of sugar

3 Large Eggs

½ cup of Vegetable oil

2 Tablespoons of Lemon Extract (yellow Lemon Sqeezes)

1 Teaspoon of Pure Vanilla Extract

Oven is set at 350 degrees and needs to bake for 50-60 minutes until your tooth pick comes out clean.

Topping #1

1 cup of powder sugar

½ cup of fresh lemon juice

1 Tablespoon of Lemon Extract

Final Glaze Topping #2

½  cup of powder sugar

¾  cup of raw sugar

¼ Cup of Fresh Lemon juice

3 Tablespoons of Lemon Extract

First start by adding flour, salt, and baking powder to a separate bowl, mix and set aside. Then in your mixer add your sugar, sour cream, Eggs. Mix well then add in your lemon extract and vanilla. Now Slowly add in your dry ingredients until mixed well. Now you want to mix in your vegetable oil slowly and mix that well.

Pour into one big loaf pan or two small ones. Make sure they are greased up or sprayed with no stick spray. I like to put parchment paper under mine.  Then pour your mix into the pans. Bake in the oven until it is golden brown and tooth pick comes out clean.

When there is 15 or less on your timer start by mixing your First topping. (Topping #1) Add your sugar, lemon juice, and lemon extract into a small sauce pan and heat until it is liquefied. Once your loaf is done baking- Take out and set aside for a minute or two to cool. Then dump it out onto a big piece of wax paper. Flip over (Careful, it’s still hot). Then get a tooth pick and poke a ton of holes into the top of the loaf. Get your Topping mix and carefully spoon on to the top until it is all gone and has seeped into the holes.

Now that it’s almost cooled and your topping has cooled down and soaked into your loaf. Make up your final glaze.  In a small sauce pan add in your powder sugar, raw sugar, lemon juice, and lemon extract. One that is in liquid form but slightly syrupy. Slowly drizzle and spread all our the loaf. Make sure you cover the top and sides until it’s all gone. Then you can cut a piece to enjoy or chill it and serve cold. Keep in fridge for a longer and fresh keep. You can also sprinkle some lemon zest on top of the loaf for an added flavor bonus and decoration.

This is so yummy and it is easy to make! Once you do it once- You will be a pro! Add in some strawberries for  a different flavor or blueberries. I also like to wrap mine up in wax paper and then foil to avoid it sticking.

  4. I love lemon treats like breads, so I am going to try this one out. My fiance and I both like to bake stuff and we both like lemon pie, cake, bread, etc. so I saved it in Pinterest and Yumprint too. Thanks for the recipe, it looks really incredibly good.
