Hey It’s Peachy Keen readers! Kristin from Ro*Tel here… I am excited to be writing for Priscilla today! Let me tell you a little bit more about myself. I live in the Windy City with my Bichon Frise, Joey. Living in this eventful city always keeps me busy! Cinco de Mayo is just around the corner! What better dish to serve than tacos? This holiday is the perfect opportunity to try a new festive taco recipe. The beauty of this dish is that you can really use whatever ingredients, such as cheese, avocados, tomatoes, corn, salsa, beans, etc. I’m planning to make this easy grilled turkey tacos recipe for my Cinco de Mayo dinner party! As a lover of tacos, I make them a lot. So, I make my own taco seasoning recipe, which I have included in this recipe. Hope you enjoy!
Grilled Turkey Tacos
Ingredients
* For Taco Seasoning
o 2 tsp. hot chili powder
o 1 ½ tsp. paprika
o 1 tsp. onion powder
o ½ tsp. sea salt
o ½ tsp. garlic powder
o ½ tsp. ground cumin
o ¼ tsp. dried oregano
o Pinch cayenne pepper
o Pinch red pepper flakes
o Salt and pepper to taste
* 1 pkg ground turkey breast * 1 can Ro*Tel® Original Diced Tomatoes & Green Chilies-No Salt Added, drained
* 3/4 cup water
* 1 can black beans, drained and rinsed
* 1 avocado, pitted, peeled and diced
* Shredded lettuce
* 12 white corn tortillas
* Sour cream and limes for serving
Directions
1. Combine taco seasoning ingredients in a small bowl and set aside.
2. Heat a skillet over medium-high heat. When warm, add turkey and cook until meat crumbles. Drain liquid from the skillet.
3. Add tomatoes, taco seasoning and water to the skillet; bring to a boil. Reduce heat and simmer for 5 minutes.
4. Mix black beans and diced avocadoes in a bowl; set aside.
5. Add ground turkey to tortillas. Top with avocado-bean mixture, shredded lettuce and sour cream. Serve with limes.

I made taco today but they were nothing as good as this sounds and looks. I’ll have to try this recipe, my kids will love it.
My wife and I only eat seafood, turkey and chicken. We too, use ground turkey for tacos,meat loaf, meat balls and spaghetti. I’m definitely saving this recipe.
